Food Feature!

LOW FAT BUTTERNUT SQUASH BAKE

Ingredients

Butternut Squash

2 cups of water (approx.)

Flax Seeds - purchased in bulk.

Pinch of Salt (If Desired)

Preparation

Preheat oven to 375 degrees
Cut squash lengthwise in two pieces.  Use a spoon to scrape out the seeds and goop. Place squash in large, covered baking dish face down (so that the skin is upward in the dish)  pour water over the squashes ensuring that you have approximately 1” of liquid in the pan.  Cover and bake for 1 hour.  Remove and cool.  Crush the flax seeds with a mortar and pestle (if you have it) to release the omega fats.  Scoop squash out of the skin and sprinkle on the flax seeds.
